START PATIN FISH
Ingredients / spices:
• 2 catfish, cut into 3 parts
• 2 bay leaves
• 2 cm lemongrass, taken white, crushed
• 1 1/2 teaspoons of salt
• 1 teaspoon of sugar
• 500 ml of thin coconut milk, (from
squeezed thick coconut milk)
• 200 ml of thick coconut milk from 1
coconut
• 3 tablespoons of oil to saute
Ground spices:
• 8 shallots
• 5 cloves of garlic
• 3 cm of turmeric, burned
• 4 pecan nuts, roasted
• 1/2 teaspoon of pepper
• 2 cm of ginger
Processing Method:
• Smear the catfish with 1/2 teaspoon
of salt and 1/2 teaspoon of lime juice. Let stand 10 minutes.
• Heat
the oil. Sauté ground spices, bay leaves, and lemongrass until fragrant. Add
thin coconut milk, salt and sugar. Cook until boiling.
• Add catfish. Cook until well done.
Pour thick coconut milk. Cook again until boiling.
• For 6 servings
